Vegan Pasta Carbonara Recipe

Are you looking for your next Meatless Monday meal?  Here is a delicious vegan pasta carbonara that’s sure to please the taste buds of vegan and meat eaters alike.


  • 8-10 oz of your favorite pasta – we used De Cecco Spaghetti
  • 1 (13 oz) can of coconut cream
  • Salt and pepper to taste
  • 6-8 slices of your favorite vegan bacon diced – we used LightLife Smart Bacon
  • 5 oz of your favorite vegan cheese, shredded – we used Field Roast Chao Original
  • ½ diced white onion
  • 1 large clove of garlic, minced
  • 1 oz of chopped mushrooms
  • Fresh parsley to taste
  • 1 tablespoon of olive oil or other oil for cooking

Recipe serves 4 adults


  1. Bring water to a boil, generously salt water and toss in pasta. Cook per directions on package.
  2. While pasta is cooking, heat oil in a pan and sauté onion and garlic for about 3 minutes on low.
  3. Add mushrooms and bacon (and a little salt to taste) to the pan and cook for about 10 minutes.
  4. In another pan, bring coconut milk to a slight boil, then reduce the heat to low to allow it to simmer until pasta is done cooking.
  5. After pasta is done cooking, drain and reserve about 1 cup of the pasta water and set aside.
  6. Combine the coconut milk and pasta together. You can add pasta water to adjust the sauce to your desired consistency.
  7. Fold in sautéed veggies, vegan bacon and shredded cheese.
  8. Plate, add parsley garnish, and enjoy!
